Clayoquot Wilderness Lodge Welcomes the Return of ‘The Wild Table by Uchi’.
The acclaimed culinary collaboration returns to Vancouver Island in 2026.
Vancouver Island, BC (June 16, 2026) Clayoquot Wilderness will welcome Hai Hospitality’s multi award winning Uchi restaurants – popular across the United States - back to Vancouver Island’s wild west coast this year for the return of The Wild Table by Uchi, an intimate three-night Japanese-style culinary weekend taking place over the dates September 3-6, 2026.
Returning by popular demand, this immersive long weekend combines luxury Canadian safari-style accommodation, all dining and beverages, and guided wilderness adventures, alongside a hands-on sushi-making demonstration and two feature dinners showcasing Uchi’s refined Japanese-inspired cuisine and fresh seafood focus - all served just meters from the ocean in Clayoquot’s wild coastal setting.
Building on the success of last year’s debut, the 2026 event features a 10-course degustation menu, inviting guests to experience more of the creativity, precision and theatre that have made Uchi a celebrated name in contemporary dining. Guests staying at Clayoquot can look forward to locally sourced wild seafood elevated through Uchi’s Japanese-inspired techniques, with highlights including local oysters, the signature flounder crudo dish Hirame Usuzukuri, miso salmon with ponzu and yuzu marmalade, and scallop dish Namahotate Nigiri.
Clayoquot Wilderness Lodge General Manager Sarah Cruse said The Wild Table by Uchi had quickly become a natural extension of the lodge’s culinary philosophy and sense of place.
“The Wild Table by Uchi captures so much of what makes Clayoquot Wilderness Lodge special; an extraordinary sense of place, unforgettable dining and the opportunity to connect more deeply with nature and with one another,” Ms Cruse said. “Bringing a culinary partner of Uchi’s caliber into this remarkable setting on the banks of the wild Clayoquot Sound creates a truly one-of-a-kind experience for our guests.”
Uchi Chief Culinary Officer Jack Yoss said returning to Clayoquot Wilderness Lodge for The Wild Table by Uchi weekend was an opportunity to deepen a partnership that already resonated strongly with guests.
“We loved the format we created with Clayoquot last year, so we’re bringing that same structure back - it worked incredibly well for both the kitchen and for guests,” Chef Yoss said. “It was amazing to see how many guests at Clayoquot Wilderness Lodge had already dined at Uchi or were regulars of ours, and we’re hoping to welcome some of those familiar faces again this year. The new 10-course menu allows us to go even deeper, with dishes such as hama chili yellowtail with ponzu and Thai chilli, scallop crudo with strawberry and umeboshi, a bluefin tuna negitoro handroll topped with Northern Divine caviar, and nigiri flights designed to complement Clayoquot’s own signature dishes at the table.”
In between dining experiences and demonstrations, guests can explore Clayoquot’s vast wilderness surrounds through guided adventures including horseback riding, hiking, canyoning, yoga and the invigorating glacial plunge.
