Nomikai by Sushi Saint to open at ICON Park this Summer
New concept from Michelin-starred Chef Michael Collantes brings shareable Japanese-inspired dining, premium steaks, seafood and craft cocktails to ICON Park
ORLANDO, Fla. (June 17, 2026)– From sushi and seafood towers to dry-aged tomahawks and Japanese-inspired cocktails, Michelin-starred Chef Michael Collantes is bringing a bold new dining experience to ICON Park. Opening later this summer, Nomikai by Sushi Saint will offer an energetic atmosphere centered around shareable plates, memorable gatherings and a fresh take on Japanese-inspired dining on International Drive.
The restaurant will open in the space previously announced as Sushi Saint and remains under the same ownership and culinary leadership. The reimagined concept expands beyond traditional sushi offerings, creating a dining experience centered around gathering and celebration.
Named after the Japanese word for a celebratory gathering centered around food, drinks and conversation, Nomikai reflects the restaurant's focus on bringing people together around memorable meals and shared experiences.
The menu expands on acclaimed raw preparations and sushi offerings while introducing large-format dishes designed for sharing. Guests can enjoy items such as salmon aguachile, hamachi truffle potato, traditional sushi rolls and large-format omakase platters alongside shareable entrées including koji-marinated dry-aged tomahawks, bone-in ribeye, whole branzino, miso king salmon and lobster noodles. A bespoke cocktail program inspired by Japanese ingredients will complement the menu.

The restaurant’s design embraces what Collantes describes as a “Tokyo neo-cyberpunk” aesthetic, featuring neon blues and purples, original artwork and a soundtrack of electronica, house and lounge music. With approximately 60 seats, the space is intentionally designed to create an intimate atmosphere despite its vibrant energy.
Nomikai by Sushi Saint joins ICON Park’s growing collection of dining and entertainment experiences, further enhancing the destination’s lineup of offerings for both Orlando residents and visitors.
Nomikai by Sushi Saint is expected to open in late summer 2026 at 8371 International Drive, Suite 60, Orlando, Florida 32819.
